This is one of my favourite seasonal recipe. Fall is my favourite season and I love juicing pumpkin and squash especially around this time of year. I have made this recipe both cold and hot and as well as a smoothie and they are all are delicious. I try to create versatility with my recipes so that you can always try some of them as smoothies too.
Today I will share with you the cold-pressed juice version.
One of my goal is to open up more juicing options for those who want to expand on the amount of fruits and vegetables they consume in a day. The reality is, we are not eating enough fruits and vegetables. The reason why we are aging faster, becoming sick often, low energy where it's hard to get through a day without an over-excess amount of caffeine. We have to change what we eat. Juicing is a convenient alternative to get our vital vitamins and nutrients. It literally reverse the signs of aging and more.
This morning when I was dropping my kids off to school, in mid conversation this woman asked if our parents live in the area and if we are coming to movie night, she thought my kids were my siblings. I was flattered... I'm turning 32 later this month and my children and others think I'm in my early 20s. Of course genetics play a role, but I owe a lot of it due to the fact that I juice. Try it and you'll see what I am talking about.
Although Pumpkin/Squash provides the body with a variety of vital nutrients, the most important ones are potassium and vitamin A and C. Potassium is a very important nutrient for our body because our muscles, brain, heart, kidney and nervous system all thrive on it. Overall, besides the delicious taste, this juice is excellent for our eye health.
