PESTO PENNE PASTA

So I wanted to make something that was quick and easy and in one pot. I first thought of making brown rice with stew pumpkin, pigeon peas, cabbage and sauteed spinach but I opted for something a little more gourmet instead; this Pesto Penne Pasta. Of course it's not a dish you would have everyday but in moderation it's totally fine. Plus no animals were harm making this deliciousness.

Even with my juice recipes, for the most part I aim for gourmet. I love anything that is gourmet. One day I will open my first Juice Wealthy shop with fresh gourmet vegan entrees and gourmet juices...did you realize how many times I used gourmet in just one paragraph? Yeah I know! This dish in particular though was very delicious, easy to make and perfect for the entire family and gatherings.

I started by cutting zucchini and pumpkin into cubes, roughly dicing the red onion before placing it in the oven.

After removing it from the oven and placed in a stove top grill pan, I added kernel corn and baby spinach to the mixture.

My family asked for seconds with this recipe... it's 100% vegan and not shy of bold flavours and taste suitable for any palate.

Read the ingredient label to make sure that the pesto has no parmesan cheese in it. You can always add fresh cucumber and tomatoes to this recipe as well. Please let me know how you like this recipe and don't forget to like share and comment.

Turmeric Rice Vegan Burrito

I have made my fair share of vegan burritos over the years but this one is at the top compared to others. It is really our family favourite meal... with a side order of sweet potato wedges or a garden salad this entree is perfect for any family.

I remembered years ago when I first thought about switching to a more plant-based vegan diet. I would only see very bland foods, no flavour of any kind...for example I recently saw a post that consisted of boiled whole wheat pasta and steamed broccoli. I thought to myself, how could anyone find that to be tasty? Anyway, I shouldn't be judging but what I do know is food has to be delicious and flavourful for me to consume, even vegan food.

Recently, I have been inspired to share a side of me that has been hidden for a while, which was what I ate on a daily basis aside from juicing. I have been so afraid to share that side of me because I was afraid of not being vegan enough; but I'm like whatever I am here to inspire individuals who wants a little kick in their plant-based meals and to make that experience less scary and intimidating for them. I want them to know that eating plant-based doesn't have to be boring. I am from the Island of Spice(Grenada) so that's another reason why flavour is so important to me. Below I share with you one of my vegan burrito that's an instant family favourite.
