So I wanted to make something that was quick and easy and in one pot. I first thought of making brown rice with stew pumpkin, pigeon peas, cabbage and sauteed spinach but I opted for something a little more gourmet instead; this Pesto Penne Pasta. Of course it's not a dish you would have everyday but in moderation it's totally fine. Plus no animals were harm making this deliciousness.
Even with my juice recipes, for the most part I aim for gourmet. I love anything that is gourmet. One day I will open my first Juice Wealthy shop with fresh gourmet vegan entrees and gourmet juices...did you realize how many times I used gourmet in just one paragraph? Yeah I know! This dish in particular though was very delicious, easy to make and perfect for the entire family and gatherings.
I started by cutting zucchini and pumpkin into cubes, roughly dicing the red onion before placing it in the oven.
After removing it from the oven and placed in a stove top grill pan, I added kernel corn and baby spinach to the mixture.
My family asked for seconds with this recipe... it's 100% vegan and not shy of bold flavours and taste suitable for any palate.
Read the ingredient label to make sure that the pesto has no parmesan cheese in it. You can always add fresh cucumber and tomatoes to this recipe as well. Please let me know how you like this recipe and don't forget to like share and comment.
