A plant-based diet is a type of diet where the individuals following this lifestyle strive highly on plants; which includes but is not limited to fruits and vegetables, legumes, whole-grains, nuts and seeds. Other labels that may fall under the "plant-based" umbrella includes veganism, vegetarians, lacto-vegetarians. However, what makes a vegan diet slightly different from a plant-based diet is their zero tolerance for meats or any animal products. 100% cruelty-free is their most important objective; it doesn't stop at food for them but in each aspect of their lives.
Although, plant-based dieters consume mainly plant foods, some may also consume small amounts of meats, eggs, fish, and dairy products. The main goal of this diet is to live a healthier lifestyle by making changes to current eating habits that may be contributing to health related issues. By eliminating processed and unhealthy ingredients and replacing them with healthier alternatives, we all can live longer, happier and healthier. A plant-based diet is full of all the vital macro and micro nutrients we need for daily functions.

From personal experience, a plant-based diet is not only a sustainable lifestyle, but is also great for the environment in comparison to an animal based diet. Thinking ahead at my future endeavors in my culinary profession, I believe that a plant-based diet will be the forefront or the focal point of my menu. A few years ago, I became severely overweight due to the bad food choices I was making. I was eating way too much processed foods in a way that my body had to work extremely hard to process. I was unhappy, overweight and was dealing with a lot of health related issues; until one day I decided enough was enough and started eating highly plant-based. That day my life changed for the better and since then I have always promoted a highly plant-based diet. "You are what you eat" as the saying goes so of course I would want everyone to experience this feeling.
I would make this recipe again! The ingredients were local and easy to find and I also wanted to show that eating plant-based isn't shy of flavours and colours. It's definitely not a dish I would recommend for daily consumption, but it's certainly a gourmet treat that is 100 % vegan and plant-based. Some of my challenges were trying to implement the right cutting techniques in which I learned so far in this program.
